I currently have 52 active and 5 inactive players totalling obviously 57 out of a max of 60. Just realised that the draft will bring in 7 new players. What happens in this scenario? Will I only be able to draft three? Or will four automatically leave?!?! Or do I have a few days afterwards to re-sort the squad?

You will have until ... preseason midweek 1 to get down to 60 Regular season midweek 1 to get down to 53
Since your league is about to draft you have options ..
1. Bundle picks/players and trade for a quality player. Sort of a 2 for 1 deal. 2. Voiding contracts. You have from the draft to training camp to void your draft picks contracts. typically you do this for your late rounders .. all players with voided contracts go back to free agency pool. You may find the current FA pool has better players than the ones you drafted. there is no cap hit for a voided contract. 3. Cut players. Typically, you'll do this anyways. I'll usually start with my 1 year left players first since they do not have any effect on next year's cap.

Your late rounders don't typically have a bonus, so you can wait until after training camp to see if they might be hidden gems since there is no cap hit if you cut them afterwards (watch their progress movement in their first TC, if their future is a large increase you probably have someone you don't want to let go of). Of course, you still have to decide who to let go of to get to 60 players in TC.
BTW, the roster limit is enforced at training camp, not the first preseason game (although you can sign players and be above the limit during any midweek stage as long as you are back to the limit for the game stage)

Sorry, me again - need more clarification:
I've currently got 64 players with 1 pending contract. So let's say I get him that = 65
I've cut 5 players tonight (2 seem to have been showing as cut for a while now - Schutz being one of them). Will they have disappeared by the morning?!
Let's say they do, I'm down to 60 - that's okay to send to training camp right?
After training camp, I then have to quickly get rid of 7 others right?!?

If you have 5 pending cuts and 1 pending contract, if the player signs you'll be at 60 players for camp which is the limit. (If he doesn't sign you'll be at 59 which is ok, too).
You can go through the entire preseason with all 60 players, you don't have to cut down to 53 until the first regular season game.
