I wasn't able to renew many contracts last season due to cap. I assumed they would have left this morning, however despite seeing them on FA they're also still on my Team Page under the above heading.
Does this mean if I can offer them a contract tonight before anyone else snatches them, they're auto mine or will others have as much chance as me (if so, why are they still in my roster?!).
Some clarification would be great :)

Do not refresh your page and sign them as quickly as possible

They are FAs. Everyone has the same chance to sign them.

People have been complaining about this for years.
You have to click "only under contract" to see who actually is on your roster until the draft.
And then manually remove anyone from your depth chart who is no longer actually part of your team, or else they will still be there with no indication that what you are seeing is just a figment of your imagination.
As the minority , as usual . I like this set up. That being the case I bet it will change.
I see it as a m chance to find your players (very easily ) insteady of searching FA. But I routinely let players walk to test the market, but instead offer them a contract that's not too expensive . Unless of corse some one else is willing to offer them more .
I do 80 percent of my restructures this way. Only offering contracts at resigns to elite players that will garner much attention in FA.
Either way I see the nfl system working similar ways as the season doesnt officially start until march 9 and actually being able to sign players to contracts. I see this way being so open leaves alot of leeway for more accurate depictions of the nfl offseason...if jdb wanted to add them in the future.
