Is there a way to go back to general defaults without firing the head coach

If you own a team, there are no "general" defaults. If you select the default values, they will be set to your head coach's weights.

You have to have a head coach so the only way to see the "general" ratings is log out and then enter the URL for the league so you can see what a non-owner would see.
