realize this doesn't apply to your situation but if a defender has the possession of the ball like a interception or a fumble recovery where he is with the ball and returning it to the opposite end zone the clock should be running .

Entirely incorrect. Any PAT attempt is an untimed down. No time runs off the clock no matter what happens
