How long would it take for a player to "adjust" to a new position? Say I signed a LG and move him to RG, will he be good enough to plug in right away? or wait a season or 2? and does he have to play to get experience? or will coaching bring him up eventually?

I believe a player's intelligence will provide a boost to their development along with playing time in the new position. Then, when training camp comes around for the next season, hope for the best. I'm still pretty new to the game, but I've developed a couple guys now with success.

If the positions have close to equal physical weight, then not long.

The weight (lb/kg) adjusts to the average weight of the assigned position. The players learned knowledge of the postion is quickened by his intelligence .

But at +/- 8 pounds a year. So if you want to convert your 250lb FB into a RG, you're looking at 5-6 seasons to get him up to weight.

Does anyone know how long it takes for weight to change?
I had a FB who was ~250 lbs that I moved to LG but over two seasons he only gained maybe 10 lbs total. At that rate, by the time he reached the weight he needed to be at he would have been ready for retirement.
