If Miami recovered it in the end zone it would have been a touchback, Miami ball at the 20.

Hmmm, thinking back to my days as a football referee, I think it depends which force sent the ball into the end zone. If it's a kick, that's a touchback. If the QB drops back in the end zone and is sacked, that's a safety.
In this case the game engine must be ruling that Miami stripping the ball at the goal line is what propelled it into the end zone, where Miami recovered the live ball. Miami in possession in the end zone they are defending as a result of Miami sending the ball into the end zone...safety.
Had the fumble itself (rather than the strip) or a bat by a Jacksonville player been the cause of the ball going into the end zone it would be a touchback.
Of course...I have no idea whether the sim considers force in a situation like this, but IRL that's what would matter.

Wouldn't it only be a safety if the Miami player who recovered the ball in the end zone tried to run it out and got tackled in the end zone?
If I'm seeing this replay correctly, Jacksonville is the team that intercepts then fumbles, right?

Jacobs knocked the ball out at the one and it went over the pile on and out of bounds. I pretty sure he has to have possession. IDK if that is a safety? It's like if a punter punts it backwards out of bounds through the end zone..that is a safety. Same concept here the offensive guy knocked it through the end zone but did he have possession? In the stats there was no FR. The offense fumbled in the opponents endzone. I think that is a safety. Back to rule book. Perhaps the fumblerooski rule came in to effect. Ha!

I think you are right, it should have been a touchback for Miami. I believe the interception threw off the game engine logic.

If the fumble was recovered in the EZ after the interception it should be ruled a touchback, not a safety
