I understand that the Opinion of You rating changes the willingness of a player to renegotiate with you. Is there any way in which the player's opinion of you can be raised if it is at unhappy? Is there a specific reason that some players' opinions move to unhappy or happy?

For example, some of the players on said team were playing behind their backups this year once I reached eight losses and one win. Could this have been the reason that their opinion changed to unhappy?

This is in MFN-73 where I'm having this problem... I'm Los Angeles... I have arguably the best player in the league (James Fortner, 2nd year), the season just ended (his rookie season, the first season of MFN-73), and his opinion of me is "unhappy" because I had Roberto Maples playing ahead of him for most of the year. Fortner is a FB that can play any offensive position except for QB. He's awesome, but I can't sign him, Ryan Rasmussen (a young LG with a 90 future rating), or Steven Chaplin (another young player, 85 future, but he's busted from a 93 future rating). I don't want to lose any of these 3, even Chaplin, but I'm worried that that's what'll happen if I can't increase their opinion of me by the end of this upcoming season.

"Unhappy" will resign with you .. "Livid" they wont.
EDIT: Strike that .. Just tried an "unhappy" player and they wont resign

The two year contracts are definitely going to be challenging to navigate with that feature, and may force starting 'unready' youngsters just to keep them happy.
