If I set my teams plays to some that are unfamiliar will they start learning them on the week off or is it only during games? I meant to ask this a couple seasons ago as i am not sure if they even do during the season as well on off days.

The learning logic takes place for each game week, whether your team plays or not. So yes, you still study the playbook during a playoff bye and could do 2 separate sets of plays to study if you wish.

When you say two separate sets of plays, does this mean you can study a set of plays for each sim day, instead of one for each game week?

It's one per game week, but if your team has a bye they still study the plays that week.
