All the time we look at overall ratings of a player, but great scouting is picking players that have a skill set that fit your system and what you do. I. E. Seahawks, Patriots, Steelers, all consistent winning teams.
And you should adjust your player weights to place more importance on those skills that you value the most, so that the overall rating better reflects YOUR overall view of a player.
