When I am setting up a defensive rule, the 320 set (3RB, 2TE) is not among the choices in my dropdown menu.

I think there's only an offensive formation with 3 RBs, 1 TE and 1 WR. All other formations have either 2, 1 or no RB.

OK, just to prove I am not crazy, I am going to submit this again. And, this time, with documentation.

My opponent ran this against me five times in my most recent game. The play is PA TE Drag out of the goal line set. It includes three RB and two TE. But, when I am trying to put together my defensive rules, there is no 320 option in the dropdown menu.

it's just the 2rb3te formation. for some reason the player card always lists the third te as a fb. Pretty much every playbook has that PA TE drag, you can see it if you just look through your own playbook and check the 2RB3TE formation.

That may be true, but it's still confusing, especially when you are trying to game-plan against it. The card should list the third TE as a TE.
