I noticed in MFN 8 that the conference championships were on 1/10, and the league championship is on 1/24.

Does this mean we get two weeks of practice / injury recovery / scouting before the game?

Not two sim stages, but two weeks worth of those items.

Yes, there is a bye week between the conference championships and the league championship, and you do get an additional week of injury recovery and practice/scouting.
