If I cut some players during the playoffs (I'm eliminated) bringing my roster total below the minimum, will the AI sign players for me at the next sim even though I don't have any games left?

The roster checks are run on all teams during each game stage, not just the teams that are playing that weekend, so yes, the AI would sign players to get you back up to the minimum.

Thanks, glad I asked.
I was hoping I could cut players I was going to let go to free agency so I could avoid the issue of having them continue to appear on my depth chart next season.
Will this be the same result if I cut them just before the "End of Season" stage?

You'll be fine cutting them for the end of season stage.
