OK, I'm back and ready to try another league. After taking ownership of a team, I got the message: "You do not have a full coaching staff." Clicking the provided link takes me to the team page, but from there I'm not seeing a way to hire a position coach to fill out the open coaching staff position.
Then again, based on how I did in the first league, maybe no coaches want to work for me!

On your team page you'll see under the coaching staff what coaches you are missing. Under the search menu, you can search for coaches. If it's in early free agency, you can make an offer on any coach in the league - even ones on other teams as long as the offer is a promotion from their current position. Once early free agency has passed, you can only make offers to unemployed coaches. Coach hiring is done in any stage that free agency is processed (i.e. all stages except during the draft).
You will need a head coach in order to set your game plan; other than that, missing coaches will impact your player improvements during training camp. If you still have missing coaches when you enter the first preseason game, the game will automatically fill your coaching staff for you.

When searching for coaches, the attributes you can sort on and the ones displayed are player position attributes, not coaching attributes. I can't find the best Offensive Coordinator, for example.

The attributes are the player attributes, i.e. if you wanted to find a quarterbacks coach who was best at improving your quarterback's accuracy you could choose that from the attribute selection. To find out the best at a coach position (Head coach, coordinator, etc), choose that from "Position Score." If either of those are selected, those scores will be displayed in the result set in a sortable column.
